Chinese Dish In Origin “Fish Tocho”

I was looking for fish that could be made into cooked paksiw but I did not find anything in the fresh food stores I went to.
So this was what I bought, 4 sliced ​​of fish at 80 pesos.
I asked the seller what kind of fish it was and he replied it was a sparrow fish, I think this fish is somewhat kind of macherel.
I wondered what delicious recipe should I cook with it.

Fish Tocho
Tocho is a popular dish of Filipino which is chinese in origin.

Ingredients:

Fish cleaned and cut into serving pieces.

3 pcs. tomatoes diced.
1 small sachet of black beans.
2 blocks of tofu.
1 medium-size onion.
3 gloves garlic minced.
2 thumb-sized ginger julienned.
2 tbsp vinegar.
2 tbsp soy sauce.
1 cup of water. Oil for frying.

Preparation:

Put in the tofu in a small bowl, crush it , add the black pepper, soy sauce and vinegar. Set aside

Season fish with salt. Fry in oil until golden brown. Set aside.

Discard the oil from the pan leaving about 2 tabespoon. Saute ginger and garlic until light brown.

Add tomatoes and onions, saute until tomatoes become soft. Add the mixture of tofu and black beans.

Add water, mix well. Simmer for 3 minutes. Add fish simmer for another 5 minutes. Remove from heat and transfer to serving dish.
