OAT CRUNCHIES from pantry staples

I have been hankering for these sweet, chewy crunchies for a couple weeks and this morning I finally had a gap to make them. They’re the perfect yummy snack to have with your tea or add to your kids lunch box.

My mom had made them for decades and I have naturally inherited all her recipes. I can also remember our school tuck shop selling them at break time when they had just come straight from the oven, all hot and sticky.

My kids are now both in their late teens and not as interested in my treats, but let’s see how long they last in the kitchen today.

OAT CRUNCHIES

INGREDIENTS
2 (4) cups of rolled oats
1 (2) cups desiccated coconut
1 (2) cups all purpose flour
200ml (400ml) brown sugar
1 (2) teaspoons bicarbonate soda (baking soda)
175ml (350ml) Margerine
45ml (90ml) Golden syrup

METHOD
Preheat your oven to 180•C with the shelf in the middle of the oven.

Add all dry ingredients into a large mixing bowl and combine.

Add the margarine and syrup to a small pot or jug and heat until combined. The syrup will sink to the bottom but that’s ok.

Add the wet ingredients to the large bowl of dry ingredients and combine well. Keep mixing until there is no dry mixture left and everything is well
combined.

Grease a large baking tin and add the mixture into your tin.

Use a large flat spoon to press the oat mixture down into the tin to make a flat smooth dense surface. You could also use wax paper of the mixture and a rolling pin to get a smooth flat surface. It doesn’t have to be perfect, but the more even it is the more even it will bake.

Place the baking tin on the middle shelf of the oven and bake for 15-20 minutes.

The crunchies should still be puffy, golden and soft when removed from the oven.

Allow to cool slightly and then cut while still warm. If you try to cut when cold then they will crack and crumble.

Serve these yummy treat with tea in the morning for a quick breakfast snack or any time in the day as a snack between meals.

Make sure to store them in an airtight container for fresher results.

I love baking homemade treats and these are so easy!

Notes
I made a double batch and use the amounts in the brackets above. I also baked the crunchies for 20 minutes at 180•C. They turned out perfect!
