Chicken Pizzaiola

My love for Italian cuisine is encouraged by my family and friends. So many delicious dishes have already been put in front of them, and most have been eaten with love.

Okay, okay, I admit not everything was a success.

But like Alfred Einstein said: >"Failure is success in progress."

I am not Italian, but I appreciate their delicious food immensely—the spices, the kinds of pasta, and the wine and bread dishes to die for.

At home, I'm doing my best to recreate all my favorite recipes.

Of course, I will never discover the secrets of Italian cuisine, but I am satisfied with my own 'Italian' meals and skills. This dish is easy to prepare, has a broad family-friendly appeal, and has phenomenal flavors.

But judge for yourself.

Let's get to it.

Method of preparation:

We will start with the sauce because it needs some time to let the moisture evaporate and become a delicious thick sauce.

  • First, clean the cayenne pepper. Cut it in half, remove the seeds, and cut it into small pieces.
  • Next, peel the garlic and crush it with a garlic press.
  • Then the union, peels it and cuts it into small pieces.

I recommend investing in good, sharp knives.

It prevents you from cutting your fingers and also saves time. You can find good knives in every price range. Cheap does not automatically mean poor quality, but be picky in your choice. And sharpen them regularly if you use them often.

  • Heat some olive oil in a small pan and briefly sauté the pepper pieces, onion, and garlic.
  • Add the can of diced tomatoes.
  • Pour in a glass of white wine (the alcohol evaporates, so this dish is also suitable for kids.)
  • You need to bring it to a boil and then turn down the heat a bit. It should become a thick sauce.

While your sauce is simmering nicely, we start with the chicken. Oh, and set your oven to 200 degrees. So it is preheated when you are done with the chicken and the sauce.

  • Cut the chicken breast into thinner slices. And sprinkle it with some flour.
  • Heat some olive oil and quickly fry the chicken until it is light brown on both sides.
  • Place the chicken side by side in an oven dish.

I'm using pans with non-stick coating for the sauce and the chicken.

It made my life so much easier. No more scrubbing if something is burnt (yes, that happens sometimes), especially the chicken that no longer sticks to the bottom. I can't imagine my household without it anymore.

  • Season the chicken with salt and pepper before putting the sauce and the chicken together.
  • Do the same with the sauce. Salt, pepper, and also some dried oregano.
  • Then, spread the tomato sauce over the chicken in the oven dish.
  • Sprinkle some oregano on top
  • And top it off with some cheese. I purchased grated cheese. (A combination of mozzarella and Parmesan cheese.)

  • Finally, place it in the middle of your preheated oven at 200 degrees.
  • In about 20 minutes, it should be ready. The cheese melted and lightly browned.

While the chicken is in the oven for another 20 minutes, you can cook a side dish. Because we already had pasta yesterday, we opted for rice today. And when the chicken comes out of the oven, your side dish is ready too.

As someone who is not an italian and staying here in italy, i can confirm this statement 🥰. Wine here is awesome!!!!
